F.A.Q

Pizza

What can I expect?
We are a family friendly, counter service restaurant, with indoor and outdoor seating.
  • All of our pizzas come in boxes so that you can enjoy them here in our indoor/outdoor seating or take home and enjoy.
  • We do not serve alcohol but you can bring it to enjoy with your meal if you choose.
  • We do not have plates or cups, but you can bring your own if you choose.

What style of pizza do you serve?
We serve Neapolitan inspired pizza on sourdough crust. Sometimes referred to as Neo-neapolitan. This style of pizza is cooked at a high temperature (over 800 degrees) for a short time, which creates a tender crust with some charring on the crust and bottom of the pizza.

What kind of pizzas do you make?
Please check our menu for our pizza selection. We also have a monthly special that changes and you can always customize your pizzas.

What size are your pizzas?
Our pizzas are 11-12 inches and serve 1-2 people. We also have a kid's size that is 8 inches.

Do you have gluten free pizza?
Yes! We developed a gluten free sourdough crust for our friends who cannot tolerate gluten.
Please note, we will make every effort to limit cross contamination but we use flour in our kitchen, so please take your situation and health into account before dining with us.

Can I reheat your pizza?
Absolutely, our pizza reheats very well. If you are ordering to reheat and eat later, please ask for us to not slice your pizza when you order. This makes reheating much easier!

Bread

What is sourdough bread?
Sourdough describes not just a style of bread, but a way of making bread. All of our breads are made with our sourdough 'starter', that we affectionately named 'Lucille'.

Who is Lucille?
Lucille is what we call our fermented mixture of flour and water, containing a colony of microorganisms including wild yeast and lactobacilli that we started a couple of years ago in our kitchen.

Does your bread taste sour?
We don't think so. We like sourdough for many reasons, one being the delicious complexity of flavor you get from naturally leavened, long fermented bread, but our bread is not sour.

Do you have gluten free bread?
Not at this time, however, there is evidence that suggest that naturally leavened, long fermented sourdough bread doesn't affect those who have a gluten sensitivity like commercially produced bread does. If you have been diagnosed with celiac disease (a gluten allergy), however, this process does not remove gluten and you should follow the direction of your physician.

Is sourdough healthy?
There is evidence that suggests that naturally leavened, long fermented bread is easier to digest and does not spike insulin levels like commercially produced bread.

Can I freeze your bread?
Yes. Wrap it in a layer of plastic wrap and then a layer of aluminum foil and freeze.
To defrost, leave it on the counter wrapped until room temperature.
Pre-slice it before you freeze it and toast one slice at a time for fresh tasting bread anytime.
